Really, this blog post is a just salad dressing recipe. The secret ingredient is homemade plum jam (thanks to D’Arcy for teaching me that awesome salad dressing needs sweet in it). I do a couple of things really well, and one of those things is this salad dressing. Since green salad (with this dressing) is the only thing I feel confident bringing to potlucks and various get togethers, I get lots of requests for the recipe:
1 garlic bulb, chopped. There’s no such thing as too much garlic.
1/3 (of your container) good olive oil. We use Trader Joe’s organic brand.
1/3 (of your container) white balsamic vinegar. This is sweeter and lighter than regular balsamic. I get it at Trader Joe’s.
Couple tablespoons of unfiltered apple cider vinegar because I think it’s good for us.
Couple tablespoons of dijon mustard
Couple of tablespoons of homemade plum jam (no sugar added). Or a tablespoonish of honey or agave syrup if you don’t happen to have a crazy plum tree in your backyard.
I make a quart container at a time so I always have homemade dressing ready to go. It’s good for at least a week in the refrigerator, maybe a bit funky after that. Shake well.
